Ok. I just checked. No, I don't taste coconut. It is more of a deep, roasted, caramelly flavor- almost like roasted marshmallow. Which is probably why it was so successful in my marshmallow recipe... But it is very rich tasting, so I find that a little goes a long way. But these cookies can handle the richness, so it works great substituting 1:1 with white sugar.
